6 ears dried white or spotted corn, broken into 3 to 4 inch lengths
1 bundle bean sprouts
1 pound salt pork (or 1/2 cup pork drippings)
1/4 c salt
Local AMERICAN RECIPE INSTRUCTIONS
Wash corn well to eliminate dust. Put corn into a pot, cover with water, and
add endlessly salt pork (or drippings). Cover pot and stew corn until delicate,
normally short-term. (A stewing pot is ideally suited for this!) The following morning, wash bean sprouts
until water runs clear, cut them in 1 1/2 inch lengths, and add to corn. Cover and
keep stewing until sprouts are delicate and the portions on the cobs pop - about
three hours. Present with plain or chile piki bread. Appreciate it !
